After walking the Way of St. James for the first time, halfway from Porto to Finisterre, I can only confirm what you write. The coastal stage from Porto to Villa do Condo is breathtaking, the ascent on the stage to Rubiaes is challenging, but was rewarded with a great view. The small villages along the route are beautiful, even if the cobblestones are hard on the feet.
I was traveling alone as a woman and felt safe – as you described – and very comfortable with the many other pilgrims that I (re)met.
Your packing list is perfect. I am 1.59 m tall and carry around 8 kg in my rucksack, which is made for women’s backs. There are plenty of opportunities to wash along the way and I don’t need to pack anything more than you’ve described
